SMOKED TURKEY our first

 
While I was going through Sunday's coupons I started the rice for supper.
Turned out perfect, it has to be cold for fried rice.
 

Breakfast:
banana 0 pts. (105 cal)
2 hard boiled eggs 4 pts. (155 cal)


Snack:
orange 0 pts. (81 cal)
30 g. walnuts to snack on all day 1pt. (200 cal)


Lunch:
Amy's organic bean and rice burrito, my favorite (310 cal)

Dinner: 
Steak and Broccoli stir-fry 8 pts. (206 cal)
Ham Fried Rice 8 pts. (359 cal)

STEAK AND BROCCOLI STIR-FRY
from DVO'S cook'n

unseasoned meat tenderizer (optional)
1/2 pound boneless beef top round steak or round steak
3 tablespoons cornstarch
2 tablespoons sherry
1 1/2 cups beef bouillon
2 tablespoons soy sauce
2 teaspoons sugar
1 tablespoon vegetable oil
1 red onion cut in wedges
2 cloves garlic minced
1 cup carrot thin, diagonally sliced
1 cup broccoli peeled and thinly sliced stems
1/2 tablespoon vegetable oil
2 cups broccoli florets
white rice hot cooked

If desired, use tenderizer on steak according to label directions. With a large sharp knife, slice meat across the grain in very thin strips 3 to 4 inches long. In a small bowl, sprinkle meat with 2 tablespoons of the cornstarch and sherry. Mix well set aside.

In a small bowl, mix bouillon, soy sauce, remaining 1 tablespoon cornstarch, and sugar until sugar is dissolved set aside.

In a 10-inch non-stick skillet over medium-high heat, heat 1 tablespoon oil. Stir-fry onion and garlic 1 minute or until onion is limp. Add carrots and broccoli stems. Stir-fry 1 minute longer. Transfer vegetables to a bowl.

Heat 1/2 tablespoon oil in skillet. Stir-fry steak until no longer pink. Stir bouillon mixture and pour over steak. Stirring, bring to a boil. Add broccoli florets and reserved vegetables. Reduce heat to low, cover, and simmer 3 minutes or until vegetables are crisp-tender. Serve with rice.

FRIED RICE
from DVO'S Cook'n

1 tablespoon butter
1/4 C onions , chopped
1/4 C green peppers , chopped
1 cup diced ham
2 tablespoons soy sauce
4 cups cooked rice
2 eggs, beaten

Directions:
In large skillet melt butter. Saute onion and green pepper until soft. Add remaining ingredients except egg. Cook over low heat 10 minutes, stirring frequently. Stir in egg and cook 2 to 3 minutes longer.

Didn't have a container big enough for a 20 lbs.bird so we wrapped it in a large trash bag and turned it 3 times.
Around 4:00 pm he started the coals and soaked the chips.
He finally put the Turkey in at 5:00
8:00 pm finally done at 170* in the thigh
Look at that beautiful smoke ring. It was so tender and good.
